Shaking beef is a great midweek meal to make, it's easy, fast, and simple. In Vietnamese the dish is called bo luc lac.
- Steak, tender cut. - 1LB
- Watercrest - 1 Bunch
- Tomato - 1
- Red Onion - 1
- For Pickling mixture
- Water - 1/4 Cup
- White Vinegar - 1/4 Cup
- Sugar - 1 and 1/2 Tablespoons
- Salt - Pinch
- Pepper - Pinch
- For marinade
- Soy Sauce - 1 Tablespoon
- Hoisin Sauce - 1 Teaspoon
- Oyster Sauce - 1 Teaspoon
- Asian Sweet Sauce - 1 Teaspoon
- Garlic - 2 Cloves Minced
- Sugar - 1 Teaspoon
Start off by cutting your beef into little cubes, about 1 inch by 1 inch, I like to use beef ribeye, but you can use any tender piece of beef. Mix up your marinade, Soy, Hoisin, Oyster, Sweet sauce, Sugar and Garlic. pour the marinade over top of the beef and mix to cover. Allow the beef to marinade for at least 15 minutes.
While the beef is marinading, make your pickling mixture by adding the water, vinegar, sugar, salt, and pepper into a bowl. Trim the stems off the watercrest then place the watercrest into a bowl filled with water to rinse the watercrest. It can be gritty so a simple rinse off isn't always enough, I like to do a quick submerge in water to make sure all the dirt is out. Once the watercrest is cleaned, place it into the bowl with the pickling mixture, toss it around then let it sit.
As the watercrest is sitting in the pickling mixture, slice your tomato and onions up, once done, place the tomatoes around the rim of a plate and then place the watercrest in the middle,
try to get off excess fluid from the watercrest to keep it from wilting.
Add the onions into the pickling mixture.
Heat up a pan with about a tablespoon of oil, add your beef, while cooking, try to keep the beef moving and turning, you want the beef to cook evenly from all sides, I prefer to cook my beef to medium rare but you can cook it however you like.
Once the beef is done, pour it directly on top of the watercrest try to get as much of the sauce with it. Top with the onions then add a few spoonfuls of pickling fluid on top of the dish and around the tomatoes.
That is what the bottle of sweet sauce looks like. notice on the top of the label it says SWEET SAUCE, this company also makes a soy sauce that looks almost the same, make sure it says sweet sauce and not soy sauce. It can be found in any Asian market. Sweet sauce is nothing more then really really dark caramelized sugar, it's just before the burnt stage so you could make it at home, although I don't recommend it since this company does a good job of it and it's not expensive.
