BonChon Chicken is a Korean Fried Chicken that will just blow your mind. It's such yummy chicken wings. This recipe is on how to make their soy garlic chicken wings.
- Chicken Wings - 15 Whole Wings or 30 Cut Wings
- Rice Flour - 1/2 Cup
- Corn Starch - 1/2 Cup
- Water - 1/2 Cup
- For Sauce
- Garlic - 4 Gloves mashed
- Ginger - 1 Chunk mashed, same amount as garlic.
- Korean Chili Paste, Gochujang - 2 Tablespoons
- Soy Sauce - 2 Tablespoons
- Honey - 1/4 Cup
- Rice Vinegar - 1 Tablespoon
- Water - 2 Tablespoons
- For cooking
- Oil - Enough to cover chicken wings.
If you have whole chicken wings, start by cutting them down into two parts.
Take a larger bowl and add 1/2 cup corn starch, 1/2 cup rice flour, and 1/2 cup of water. Wisk together until its like a very wet pancake batter.
Place one chicken wing into the batter and remove it, you want to allow the excess batter to drain off. Once it stops dripping place the chicken wing into a pot of 350 degree pan of oil or deep fryer. Do this one at a time until your pot is full, making sure to not over crowd! Once you add the chicken to the pot, it will lower the oil temperature to about 320-325. Make sure you adjust the temp as needed to keep it between 325-350 degrees. You are going to cook the chicken wings for 8 minutes at a time. 16 minutes total cooking time.
Once the 8 minutes is up, remove the chicken from the oil and place onto a baking pan with a cookie rack on it. This will allow the excess oil to drain off, from there you will place 3-4 wings into a colander and shake the excess batter off the chicken wings so the chicken wings become nice and smooth.
You are going to cook the chicken in batches, so 8-10 wings in the first batch for 8minutes, as those are cooling and being cleaned you will cook another batch of chicken wings, once those are done you'll place the first batch (or a 3rd batch) into the oil and keep repeating until each batch is cooked for 8 minutes, cleaned up, and cooked for another 8 minutes. 16 minutes total for cooking time.
While the chicken wings are cooking you should work on your sauce.
Mash the garlic and ginger.
Place the garlic and ginger into a pot with the soy, chili paste, honey, water, and rice wine.
Heat until it's reduced slightly. Than remove from heat.
Once your chicken is done, use a pastry brush and brush the sauce onto the chicken wings.
